Ingredients
- 1 pound boneless skinless chicken breasts cut into 1-inch cubes
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon Sriracha sauce adjust to taste
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 teaspoon garlic minced
- 1 teaspoon ginger minced
- 1 tablespoon lime juice
- Salt and pepper to taste
- Wooden skewers soaked in water for 30 minutes
- Thinly sliced green onions for topping
- Sesame seeds for topping
Instructions
- In a bowl, combine the minced garlic, minced ginger, lime juice, soy sauce, salt, and pepper. Add the chicken cubes and marinate for at least 30 minutes, allowing the flavors to penetrate.
- Preheat your grill to medium-high heat. If using an indoor grill pan or the oven, preheat to 400°F (200°C).
- Thread the marinated chicken cubes onto the soaked wooden skewers, leaving a little space between each piece. This makes it easier for even cooking.
- Place the chicken skewers on the preheated grill. Cook for about 3-4 minutes on each side or until the chicken is fully cooked and has a nice char. The internal temperature should reach 165°F (74°C).
- In a bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha sauce, honey, and a pinch of salt. Taste and adjust the Sriracha sauce for spiciness, if desired.
- Once the chicken skewers are cooked, remove them from the grill. Brush or drizzle the bang bang sauce over the skewers, making sure they are well-coated. You can reserve some sauce for dipping later.
- Transfer the chicken skewers to a serving plate. Garnish with chopped sliced green onions, and sesame seeds. Serve with any extra bang bang sauce on the side for dipping.
