Ingredients
  

For the Blackened Chicken

  • 4 boneless skinless chicken breasts
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon Salt
  • 2 tablespoons olive oil

For Assembling

  • 6 cups romaine lettuce
  • 4 hard-boiled eggs sliced
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 4 slices cooked bacon crumbled
  • 1/2 cup blue cheese crumbled

For the Honey Mustard Dressing

  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons whole grain mustard
  • 2 tablespoons apple cider vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions
 

  • In a small bowl, mix together paprika, garlic powder, onion powder, dried thyme, dried oregano, black pepper, cayenne pepper, and salt to create the blackening seasoning.
  • Pat the chicken breasts dry with paper towels and rub the blackening seasoning evenly on both sides of each chicken breast.
  • Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook for 5-6 minutes per side, or until cooked through and blackened. Remove from heat and let rest for a few minutes before slicing.
  • In a large salad bowl, arrange the mixed greens as the base.
  • Arrange the sliced hard-boiled eggs, halved cherry tomatoes, diced avocado, crumbled bacon, and crumbled blue cheese on top of the greens.
  • Slice the cooked blackened chicken breasts and place them on top of the salad.
  • In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, and apple cider vinegar until well combined.
  • Slowly drizzle in the olive oil while whisking continuously until the dressing emulsifies.
  • Season with salt and pepper to taste.
  • Drizzle the prepared honey mustard dressing over the blackened chicken cobb salad.
  • Toss gently to coat everything evenly with the dressing and serve immediately.
