Air-Fried Cheesesteak-Inspired Taquitos

Ingredients:

For the Filling:

  • 1 lb ground beef

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 1 green bell pepper, chopped

  • 1/2 teaspoon garlic powder

  • Salt and pepper to taste

  • 1 cup shredded gruyere cheese (or cheese of your choice)

  • 8-10 small flour or corn tortillas

For the Dipping Sauce:

  • 1/4 cup mayonnaise

  • 1 tablespoon ketchup

  • 1/2 tablespoon dill pickle juice

  • 1/2 teaspoon yellow mustard

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add the ground to the skillet and cook until browned and cooked through, about 3-4 minutes.

  3. In the same skillet, add the chopped onion and bell pepper. Cook until softened and slightly caramelized, about 5-6 minutes.

  4. Season the beef, onion, and bell pepper with garlic powder, salt, and pepper. Stir to combine.

  5. Sprinkle shredded gruyere cheese over the filling and mix to combine then remove from heat.

  6. Preheat your air fryer to 400°F (200°C).

  7. Place a small amount of the filling mixture onto each tortilla, along one edge.

  8. Roll up the tortillas tightly to form taquitos, ensuring that the seam side is facing down to prevent them from opening during cooking. Secure with toothpicks if necessary.

  9. Repeat with the remaining tortillas and filling.

  10. Lightly spray the air fryer basket with cooking spray.

  11. Place the taquitos in the air fryer basket in a single layer, making sure they are not touching.

  12. Air fry the taquitos in batches if necessary, depending on the size of your air fryer.

  13. Cook for 8-10 minutes, or until the taquitos are golden brown and crispy, flipping halfway through cooking for even browning.

  14. In a small mixing bowl, combine mayonnaise, ketchup, dill pickle juice, yellow mustard, garlic powder, and onion powder.

  15. Stir well until all the ingredients are thoroughly combined.

  16. Taste the fry sauce and season with salt and pepper to your preference.

  17. Remove the cooked taquitos from the air fryer, serve with fry sauce, and enjoy!
