Bang Bang Chicken Salad

Ingredients

For the Bang Bang Sauce:

  • 1/2 cup mayonnaise

  • 1/4 cup Thai sweet chili sauce

  • 2 tablespoons Sriracha sauce (adjust to your spice preference)

  • 1 tablespoon honey

  • 1 tablespoon rice vinegar

  • 1 teaspoon soy sauce

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

For the Salad:

  • 4 cups diced chicken (I use rotisserie chicken)

  • Salt and black pepper to taste

  • 1 cup white onion, diced

  • 1 cup celery, diced

  • 1/4 cup chopped fresh cilantro or parsley (for garnish)

Instructions

  1. In a bowl, whisk together the mayonnaise, Thai sweet chili sauce, Sriracha sauce, honey, rice vinegar, soy sauce, garlic powder, and onion powder. Taste and adjust the sauce's sweetness and spiciness according to your preferences. Set the sauce aside.

  2. In a large bowl, add in the diced chicken along with 1 cup of the bang bang sauce and mix well to combine.

  3. Next, add in the onion, celery, and cilantro and mix well to combine.

  4. Serve on a wrap, with crackers, or by itself!
