Barbacoa Beef Tacos

Course: Lunch, Dinner

Ingredients:

For the Fresh Pico de Gallo:

  • 2 medium-sized tomatoes, diced

  • 1/4 cup white or red onion, diced

  • 1 jalapeño, diced

  • 2 cloves garlic, minced

  • Juice from 1/2 lime

  • 1 handful of cilantro

  • Salt and Pepper to taste

For the Tacos:

  • 8 flour or corn tortillas

  • 1/2 cup Barbacoa beef

  • 1/2 cup shredded Mexican cheese

  • 1 lime, cut into wedges

Instructions:

  1. To make the pico de gallo, combine diced tomato, onion, jalapeño, garlic, cilantro, lime, salt, and pepper and mix well to combine.

  2. Warm the tortillas on both sides in a skillet over medium-high heat.

  3. To assemble the tacos, evenly distribute the Barbacoa beef between onto the tortillas followed by the shredded Mexican cheese.

  4. Spoon some fresh pico de gallo on top of the tacos followed by a squeeze of fresh lime and enjoy!
