Creamy White Cheddar Mac n Cheese

Course: Side Dish, Pasta

Ingredients:

  • 16 oz (1 lb) small pasta shells or your favorite pasta shape

  • 1/2 cup unsalted butter

  • 1/2 cup all-purpose flour

  • 4 cups whole milk

  • 3 cups sharp white cheddar cheese, shredded

  • 1 cup Gruyere cheese, shredded

  • 1 teaspoon dijon mustard or 1/2 teaspoon dry mustard

  • 1 teaspoon garlic powder

  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.

  2. In a large saucepan, melt the butter over medium heat.

  3. Stir in the flour to create a roux. Cook for 1-2 minutes until it forms a paste.

  4. Gradually whisk in the milk, ensuring there are no lumps.

  5. Continue to cook and whisk until the mixture thickens, about 5-7 minutes.

  6. Slowly add the shredded white cheddar and Gruyere cheese to the sauce. Stir until the cheese is melted and the sauce is smooth.

  7. Stir in mustard and garlic powder, and season with salt and pepper to taste.

  8. Add the cooked pasta to the cheese sauce, stirring to coat the pasta evenly.

  9. Serve the creamy white cheddar mac 'n cheese hot and enjoy the gooey goodness!
