Crispy Tater Tot Potato Salad

Ingredients:

  • 1 (32 oz) package frozen tater tots

  • Cooking spray

  • 3/4 cup mayonnaise

  • 2 tablespoons Dijon mustard

  • 2 tablespoons apple cider vinegar

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • Salt and black pepper to taste

  • 1/2 cup diced celery

  • 1/4 cup diced red onion

  • 2 tablespoons chopped fresh parsley

  • 2 tablespoons chopped fresh dill

Instructions:

  1. Preheat your air fryer to 400°F (200°C).

  2. Arrange the frozen tater tots in a single layer in the air fryer basket.

  3. Lightly spray the tater tots with cooking spray.

  4. Air fry the tater tots for 15-20 minutes, shaking the basket halfway through cooking, until they are golden brown and crispy. Remove from the air fryer and set aside to cool.

  5. In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, parsley, dill, garlic powder, onion powder, salt, and black pepper until well combined.

  6. Add the diced celery, and diced red onion to the bowl and mix well to combine.

  7. Fold the crispy tater tots into the mayonnaise mixture, mixing gently, as to not break up the tater tots.

  8. Garnish with additional chopped parsley and dill, if desired.

  9. Serve at room temperature and enjoy this unique and flavorful crispy tater tot potato salad!
