Fiesta Chicken Tostadas

Ingredients:

For the Tostadas:

  • 6 tostada shells

  • 1 can (16 ounces) refried beans

  • 4 oz of La Terra Fina Southwest Fiesta with Black Beans Dip & Spread, for garnish

  • 2 cups shredded Fiesta Chicken (see recipe below)

  • 1 cup shredded cheese (such as cheddar or Mexican blend)

  • 1/2 cup pickled onions

  • 1/4 cup chopped fresh cilantro

  • Optional toppings: sliced jalapeños, diced tomatoes, avocado slices

For the Crockpot Fiesta Chicken:

  • 2 lbs boneless, skinless chicken breasts

  • 1 onion, thinly sliced

  • 1 can (14.5 ounces) diced tomatoes

  • 6 oz La Terra Fina Southwest Fiesta with Black Beans Dip & Spread

Instructions:

  1. In a slow cooker, combine the chicken breasts, sliced onion, diced tomatoes (with juices), and 6 oz La Terra Fina Southwest Fiesta with Black Beans Dip & Spread.

  2. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreddable.

  3. Once cooked, shred the chicken using two forks and mix it with the sauce in the slow cooker. Keep warm until ready to use.

  4. Spread a layer of refried beans onto each tostada shell.

  5. Spoon the shredded Fiesta Chicken over the refried beans.

  6. Sprinkle shredded cheese over the chicken.

  7. Add a spoonful of pickled onions on top of the cheese.

  8. Drizzle remaining La Terra Fina Southwest Fiesta with Black Beans Dip & Spread evenly over the pickled onions.

  9. Garnish each tostada with chopped fresh cilantro.

  10. Serve the Fiesta Chicken Tostadas immediately with optional additions like sliced jalapeños, diced tomatoes, or avocado slices.
