Freezer-Friendly Bacon, Egg, and Cheese Breakfast Sandwiches

Ingredients:

For the Breakfast Sandwiches:

  • 12 English muffins, split

  • 12 large eggs

  • 12 slices of bacon

  • 12 slices of cheddar or American cheese

  • Salt and black pepper, to taste

  • Butter or cooking spray (for cooking eggs)

  • Optional additions: spinach, sliced tomatoes, avocado slices

For the Sauce:

  • 1/2 cup mayonnaise

  • 2 tablespoons Dijon mustard

  • 1 tablespoon honey

  • 1/2 teaspoon garlic powder

  • Salt and black pepper, to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. Arrange bacon slices on a baking sheet lined with parchment paper.

  3. Bake for 15-20 minutes, or until the bacon is crispy.

  4. Remove from the oven and transfer to a paper towel-lined plate to drain excess grease.

  5. Lower oven heat to 350°F (175°C) or 375°F (190°C) depending on your preference and how quickly you want the eggs to cook.

  6. Line a baking sheet with parchment paper or lightly grease it with cooking spray or melted butter to prevent the eggs from sticking.

  7. In a large bowl, crack and scramble eggs and season with salt and pepper.

  8. Pour eggs onto the baking sheet then place the baking sheet in the preheated oven and bake the eggs for about 10-12 minutes.

  9. Once cooked to your liking, remove the baking sheet from the oven.

  10. Spread a generous amount of the prepared sauce on each English muffin half.

  11. On the bottom half of each English muffin, layer a slice of cheese, a cooked egg, a slice of bacon (break it in half if necessary to fit), and any optional additions you like.

  12. Top with the other half of the English muffin.

  13. Allow the assembled sandwiches to cool completely before freezing. This helps prevent condensation which can make the sandwiches soggy when thawed.

  14. Individually wrap each sandwich tightly aluminum foil then place them in freezer-safe zip-top bag.

  15. Label the wrapped sandwiches with the date and contents.

  16. Store in the freezer for up to 1 month.

  17. To reheat, unwrap the sandwich and place it on a microwave-safe plate.

  18. Microwave on high for 1-2 minutes, or until heated through (timing may vary based on your microwave).
