Freezer-Friendly Breakfast Burritos

Ingredients:

  • 10 large eggs

  • 1 tablespoon butter or oil

  • Salt and pepper, to taste

  • 1 pound breakfast sausage or bacon, cooked and crumbled

  • 1 (15-ounce) can black beans, drained and rinsed

  • 2 cups shredded cheddar cheese (or cheese of your choice)

  • 1 cup salsa (choose your preferred heat level)

  • 10 large flour tortillas (burrito size)

  • Optional additions: diced bell peppers, diced onions, chopped spinach, diced tomatoes, hot sauce

Instructions:

  1. In a large skillet, melt the butter or heat the oil over medium heat.

  2. In a bowl, whisk the eggs with salt and pepper. Pour into the skillet and cook, stirring occasionally, until the eggs are scrambled and just set. Remove from heat and set aside.

  3. Cook the breakfast sausage or bacon until fully cooked and crumbled. Drain excess grease if necessary.

  4. Drain and rinse the black beans.

  5. Shred the cheese if not already shredded.

  6. Prepare any additional ingredients you wish to add.

  7. Lay out the tortillas on a clean surface.

  8. Divide the scrambled eggs, cooked sausage or bacon, black beans, shredded cheese, salsa, and any additional ingredients evenly among the tortillas, placing the fillings in the center of each tortilla.

  9. Fold the sides of the tortilla over the filling, then roll from the bottom up tightly to form a burrito shape. Allow burritos to cool completely at room temperature..

  10. Wrap each burrito individually in plastic wrap, then foil. Make sure they are tightly wrapped to prevent freezer burn.

  11. Transfer burritos to freezer-safe zip-top bags. Label the bags with the date and contents for easy identification.

  12. To reheat, unwrap the plastic wrap and foil from the frozen burrito.

  13. Microwave on high for 2-3 minutes, turning halfway through, until heated through.

  14. Alternatively, you can reheat in a preheated oven at 350°F (175°C) for about 20-25 minutes, or until heated through.

  15. Serve your delicious freezer-friendly Breakfast Burritos with salsa, sour cream, or guacamole on the side, if desired.
