Frozen Piña Colada Pops

Frozen Piña Colada Pops

Ingredients

  • 4 cups frozen pineapple chunks

  • 1 + 1/3 cup sweetened coconut milk

  • 3/4 cup rum (optional)

  • 1/2 cup sweetened coconut flakes

  • Maraschino cherries

Instructions

  1. In a blender, combine the frozen pineapple chunks, coconut milk, and rum (if using). Blend until smooth and creamy, ensuring there are no large chunks of pineapple remaining.

  2. Stir in the coconut flakes, gently incorporating them into the blended mixture.

  3. Drop 1 Maraschino cherry into the bottom of each popsicle mold then pour the Piña Colada mixture into popsicle molds, leaving a small gap at the top to allow for expansion during freezing. If you don't have popsicle molds, you can use small paper cups or ice cube trays and insert popsicle sticks or small wooden sticks into the mixture.

  4. Place the popsicle molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid.

  5. Once fully frozen, remove the molds from the freezer. To release the pops, run warm water over the outside of the molds for a few seconds. Gently wiggle and pull on the sticks to loosen the pops from the molds.
