Green Goddess Pasta Salad

Green Goddess Pasta Salad

Ingredients

For the Salad:

  • 8 ounces (about 2 cups) farfalle (bowtie) pasta, cooked and cooled

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • 1/2 cup red bell pepper, diced

  • 1/4 cup red onion, finely chopped

  • 1/4 cup black olives, sliced

  • 1/4 cup feta cheese, crumbled

  • 2 tablespoons chopped fresh parsley

  • 2 tablespoons chopped fresh chives

For the Green Goddess Dressing:

  • 1/2 cup mayonnaise

  • 1/4 cup plain Greek yogurt

  • 1/4 cup chopped fresh basil

  • 1/4 cup chopped fresh parsley

  • 2 tablespoons chopped fresh tarragon (or substitute with more basil or parsley)

  • 2 tablespoons chopped fresh chives

  • 2 tablespoons lemon juice

  • 1 clove garlic, minced

  • Salt and pepper, to taste

Instructions

  1. Cook the farfalle pasta according to the package instructions. Drain, rinse under cold water, and set aside to cool.

  2. In a blender or food processor, combine mayonnaise, Greek yogurt, basil, parsley, tarragon, chives, lemon juice, minced garlic, salt, and pepper. Blend until smooth and creamy. Taste and adjust seasoning as needed.

  3. In a large mixing bowl, combine the cooked and cooled pasta, halved cherry tomatoes, diced cucumber, diced red bell pepper, finely chopped red onion, sliced black olives, crumbled feta cheese, chopped fresh parsley, and chopped fresh chives.

  4. Pour the Green Goddess dressing over the pasta salad ingredients.

  5. Gently toss the pasta salad to evenly coat all the ingredients with the dressing.

  6. Cover the bowl and refrigerate the pasta salad for at least 30 minutes before serving to allow the flavors to meld.

  7. Serve the Green Goddess Pasta Salad chilled. Garnish with extra chopped herbs or a sprinkle of feta cheese before serving, if desired.
