Grilled Peach and Burrata Toast

Grilled Peach and Burrata Toast

Ingredients

  • 2 ripe peaches, halved and pitted

  • 4 slices of sourdough bread

  • 8 ounces burrata cheese

  • 2 tablespoons balsamic vinegar

  • Salt and pepper to taste

Instructions

  1. Preheat your grill or grill pan to medium-high heat. You can also use a stovetop grill pan if you don't have access to an outdoor grill.

  2. Lightly brush the cut side of each peach half with olive oil.

  3. Place the peaches on the preheated grill, cut side down.

  4. Grill the peaches for about 3-4 minutes or until they develop grill marks and caramelize slightly. Once done, remove the peaches from the grill and set them aside.

  5. While the grill is still hot, lightly brush the slices of sourdough bread with olive oil on both sides. Grill the bread slices for about 1-2 minutes per side or until they turn golden and crispy. Remove the toasted bread from the grill.

  6. Spread a generous amount of creamy burrata cheese on each slice of toasted bread then top with salt and pepper.

  7. Place a grilled peach half on top of the burrata cheese, cut side up, and gently press it into the cheese.

  8. Drizzle balsamic over each piece of bread then cut into halves and enjoy!
