How To Make Blackened Chicken

Ingredients

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 2 teaspoons salt

  • 2 teaspoons black pepper

  • 4 tablespoons unsalted butter

  • Cooking oil (such as vegetable or canola oil)

Instructions

  1. In a small bowl, combine the paprika, cayenne pepper, dried thyme, dried oregano, garlic powder, onion powder, salt, and black pepper. Mix well to create the spice blend.

  2. Pat the chicken breasts dry using paper towels to remove any excess moisture.

  3. Sprinkle and rub the spice blend evenly on both sides of the chicken breasts, ensuring they are thoroughly coated. Press the spices into the chicken to ensure they adhere well.

  4. Heat a large cast-iron skillet over high heat until it reaches smoking point. Add the butter and a drizzle of cooking oil to the skillet, swirling it around to coat the bottom.

  5. Carefully place the seasoned chicken breasts in the hot skillet. Cook undisturbed for about 4-5 minutes, or until the bottom side is blackened and crusty.

  6. Flip the chicken breasts and continue cooking for another 4-5 minutes, or until the chicken is cooked through and the other side is blackened.
