Mediterranean Chicken Hummus Bowl

Ingredients:

  • 1 lb. boneless skinless chicken breasts

  • Salt and Pepper, to taste

  • 1 teaspoon oregano,

  • 1 teaspoon Marjoram

  • 1 teaspoon thyme

  • 1 teaspoon garlic powder

  • 4 tablespoons olive oil

  • 1/2 cup hummus

  • 2 tomatoes, diced

  • 1 cucumber, diced

  • 1/2 cup feta cheese, crumbled

  • 1/4 cup pickled onions

  • 4 pieces of pita, warmed on a pan or in the oven.

Instructions:

  1. Begin by combining salt, pepper, oregano, Marjoram, thyme, and garlic powder.

  2. Pat chicken dry and cut in half down the middle to create thin cutlets then season all over with spice blend.

  3. Heat a pan with 1 tablespoon of olive oil over medium-heat then add chicken.

  4. Cook for 2-3 minutes on both sides until golden brown and cooked through. Set aside to rest.

  5. Drizzle diced tomatoes with olive oil and season with salt and pepper.

  6. Divid hummus between shallow bowls or plates then drizzle with olive oil.

  7. Cut chicken into thin strips and lay on top of hummus.

  8. Divide remaining toppings evenly between each bowl.

  9. Use warm pita for dipping and enjoy!
