Peach Caprese Stacked Salad

Ingredients

  • 2 ripe peaches, sliced into rounds

  • 2 large tomatoes, sliced into rounds

  • 8 oz (225g) fresh mozzarella cheese, sliced

  • Fresh basil leaves

  • 2 tablespoons balsamic glaze

  • Flaky sea salt, to taste

  • Freshly ground black pepper, to taste

Instructions

  1. Wash and dry the peaches, tomatoes, and basil leaves.

  2. Slice the peaches and tomatoes into rounds of approximately the same thickness.

  3. Slice the fresh mozzarella cheese into rounds similar in size to the peaches and tomatoes.

  4. Begin by drizzling balsamic glaze onto a plate then placing a slice of peach on top. Top the peach slice with a slice of tomato, followed by a slice of mozzarella cheese.

  5. Repeat this layering process to create a stack, alternating between peach, tomato, and mozzarella, until you have your desired number of stacks.

  6. Drizzle a generous amount of balsamic glaze over each stack then top with basil.

  7. Sprinkle a pinch of flaky sea salt over each stack then garnish the stacks with fresh basil leaves. Serve immediately as a refreshing appetizer, a light lunch, or a stunning side dish.
