Refreshing Watermelon Bruschetta with Whipped Feta

Ingredients

For the Watermelon Bruschetta:

  • 1 cup diced watermelon

  • 1 cup diced cucumber

  • 1 cup diced tomato

  • 1 tablespoon agave syrup

For the Whipped Feta:

  • 1 cup crumbled feta cheese

  • 1/2 cup cream cheese, softened

For the Bruschetta Base:

  • French bread, sliced and grilled

Instructions

  1. In a medium-sized bowl, combine the diced watermelon, cucumber, and tomato.

  2. Drizzle the agave syrup over the mixture and gently toss until everything is well coated. Set aside to marinate for about 10-15 minutes, allowing the flavors to meld together.

  3. In the bowl of a food processor, add the crumbled feta cheese and softened cream cheese.

  4. Beat the cheeses together until creamy and well combined. Set aside.

  5. Slice the French bread into 1-inch thick pieces then preheat your grill or grill pan to medium-high heat. Place the bread slices on the grill and cook for about 2-3 minutes per side until grill marks appear and the bread becomes crispy.

  6. To assembly the bruschetta, take a grilled French bread slice and generously spread the whipped feta mixture on top. Spoon the marinated watermelon, cucumber, and tomato mixture onto the whipped feta layer.

  7. Arrange the Watermelon Bruschetta on a platter and serve immediately.
