Saute the onion: Reduce the heat to medium and melt the butter in the same skillet. Add the diced onion and cook for 4 to 5 minutes, until softened. Stir in the garlic and cook for 30 seconds, until fragrant.

Build the sauce: Whisk in the flour and cook for 1 to 2 minutes. Slowly whisk in the milk and chicken broth until smooth. Stir in the Dijon mustard, paprika, and a pinch of salt and pepper. Simmer for 2 to 3 minutes, stirring frequently, until the sauce begins to thicken.

Simmer the broccoli: Stir the broccoli into the sauce. Cover and cook for 5 to 7 minutes, stirring occasionally, until the broccoli is tender-crisp.

Melt in the cheese: Reduce the heat to low and stir in the cheddar and Parmesan a handful at a time, until melted and smooth.

Combine: Return the cooked beef to the skillet and stir until everything is evenly coated in the cheddar sauce. Let simmer for 1–2 minutes to heat through.

Assemble the bowls: Divide the rice among four bowls. Top with the broccoli cheddar beef mixture and garnish with sesame seeds, extra shredded cheddar, cracked black pepper and hot sauce, if desired.

SUBSTITUTIONS AND VARIATIONS

Ground turkey or ground chicken both work well in place of beef, if you’d like a leaner option. Just season them a little more assertively since they’re milder in flavor.

Swap the white rice for brown rice, quinoa or cauliflower rice for a different base.

Add crispy bacon on top for extra smoky flavor; it’s not in the original recipe, but it’s a delicious add-on.

For a spicier version, stir a diced jalapeno in with the onion, or use pepper jack cheese in place of some of the cheddar.
