These Cheesy Pimento Mashed Potatoes are ultra-creamy and full of Southern charm—made with sharp cheddar, tangy pimentos, and a hint of spice. A bold, flavorful twist on classic mashed potatoes perfect for holidays, Sunday suppers, or potluck tables.
Place the potato chunks in a large pot and cover them with cold water. Add a generous pinch of salt.
Bring the water to a boil and simmer the potatoes for about 15-20 minutes, or until they are fork-tender.
Drain the cooked potatoes in a colander.
Return the drained potatoes to the pot.
Add the butter, milk, mayonnaise, and shredded cheddar cheese to the hot potatoes.
Mash the potatoes using a potato masher until they are creamy and well combined with the butter, milk, and cheese.
Gently fold in the diced pimentos, ensuring they are evenly distributed throughout the mashed potatoes.
Season the mashed potatoes with garlic powder, cayenne (if using), onion powder, salt and black pepper to taste. Adjust the seasoning to your preference.
Transfer the cheesy pimento mashed potatoes to a serving dish. Garnish with chopped fresh chives if desired.
Serve your cheesy pimento mashed potatoes hot.
