WHY YOU’LL LOVE THIS RECIPE
The Internet has gone crazy for these viral chicken Caesar tacos and for good reason.
You’ll love them as much as I do because Chicken Smash Tacos bring together everything you love about a Caesar salad and crispy chicken tacos — in one bite.
The creamy, savory Caesar dressing, crunchy lettuce, and juicy smashed chicken have the most incredible texture and flavor.
It’s also super quick to make, totally satisfying, and feels like comfort food, except it’s also fresh and bright. Plus, this chicken Caesar smash tacos recipe is naturally dairy free with the option to add Parmesan if you like. When I was postpartum with Ruby, I followed a dairy free diet, so this recipe was a reach-for meal option for me.
INGREDIENTS
In terms of ingredients, I like to use lean ground chicken for my Chicken salad tacos. You can use either small corn or flour tortillas, depending on which you prefer. Flour tortillas will crisp up a bit more than corn tortillas.
I love using Romaine lettuce, which is classic for Caesar salad and gives it that iconic crunch!
I’ve included Parmesan here, but you can leave it out if you’re looking for a dairy-free version.
Other ingredients to mention are the mayo, which you want lovely and thick, and then the anchovy fillets, which give your Caesar salad that delicious umami flavor.

HOW I KEEP GROUND CHICKEN JUICY
Here are my top tips for juicy, tender ground chicken that’s never dry:
Ground chicken can dry out fast, especially in a hot pan. To keep it juicy in these Chicken Smash Tacos:
- Don’t over-handle / overwork the chicken when spreading it on the tortilla.
- Cook on medium-high heat, but don’t overcook. 2–3 minutes per side is just right.
- Smash gently: Just enough to create contact with the hot pan without thinning it out too much.
SMASH VS. TRADITIONAL CHICKEN TACOS – WHAT’S THE DIFFERENCE?
Traditional chicken tacos typically have chunks or shreds of pre-cooked chicken layered in a tortilla.
Chicken Smash Tacos flip that idea, literally.
The raw ground chicken is pressed directly onto a tortilla, then seared until golden and crisp.
HOW TO MAKE THIS RECIPE
Let’s make these Chicken Smash Tacos:
Make the Caesar dressing
Whisk together the mayo, mashed anchovy, lemon juice, Dijon mustard, Worcestershire, garlic, salt, and pepper. Taste and season again or adjust the balance.
Prepare the tacos
Scoop the uncooked chicken onto each tortilla. Spread it out evenly, up to the edges. Season with garlic powder, salt and pepper.

Cook the tacos
Pop each tortilla, chicken side down, into the hot skillet. Smash down gently. Cook for 2 to 3 minutes per side, or until the chicken is cooked through.

Top with the lettuce, Parmesan, some dressing and a squeeze of lemon juice. Serve immediately and enjoy!
SUBSTITUTIONS AND VARIATIONS
You can definitely make a customized version of these Chicken Smash Tacos with a few tweaks and swaps:
- Meat: Use ground turkey or plant-based mince.
- Tortillas: Swap corn for flour for a softer texture or use gluten-free wraps.
- Anchovies: Skip if you must (but I love it) – add more Worcestershire.
- Lettuce: Try arugula or baby spinach.
- Dressing: Use store-bought Caesar or vegan Caesar in a time pinch.
STORAGE AND MAKE AHEAD
The Caesar dressing can be made 2–3 days in advance and stored in the fridge.
Leftover smashed tacos can be refrigerated for up to 2 days. Store the components separately. This just keeps all the textures fresh.
Reheat tacos in a dry skillet to bring back the crispiness. Add fresh lettuce and dressing after warming.
SERVING AND PAIRING
These Caesar chicken smash tacos are yummy enough to serve solo but these are some sides I like to serve them with:
- Crispy sweet potato fries or wedges
- Air Fried Mexican Corn (Elote)
- Fresh fruit salad – whatever is in season
TIPS AND PROBLEM-SOLVING
Okay, so these Chicken Smash Tacos are super easy to make, but here are some tips for getting delicious results:
- To stop the oil from sticking to the pan, the skillet will need to be hot and properly oiled.
- If your tortillas are tearing, use room temperature tortillas and spread the chicken gently over them.
- Make sure you don’t overcrowd the pan. Instead, cook the chicken smash tacos in batches.
- If your dressing is too sharp, add a bit more mayonnaise or a little honey to balance it out.
FREQUENTLY ASKED QUESTIONS
Yes! You’ll need to use gluten free tortillas and double-check that your Worcestershire sauce is gluten free, too.
Nope. You can leave them out or substitute with extra Worcestershire or capers.
I find a cast iron skillet or heavy non-stick griddle works best for getting that golden, crispy finish. Yum!
I don’t recommend it. Smash tacos rely on raw ground chicken for their texture.
