This bold and creamy Chili Oil Chicken Salad is a spicy twist on a classic! Made with rotisserie chicken, crispy fried onions, and a chili oil mayo dressing, it’s quick, flavorful, and perfect for meal prep or sandwiches.

Ingredients
  

  • 4 cups rotisserie chicken shredded or chopped
  • 1-2 tablespoons chili oil adjust to taste
  • 6 tablespoons mayonnaise
  • 1 medium shallot finely minced
  • 2 scallions sliced thin
  • ¼ cup fried onions
  • Salt to taste

Instructions
 

  • Shred or chop the rotisserie chicken into bite-sized pieces and set aside in a mixing bowl.
  • In a separate small bowl, whisk together the chili oil and mayonnaise until smooth and well combined.
  • Add the finely minced shallot to the shredded chicken.
  • Pour the chili oil mayo mixture over the chicken and toss until everything is evenly coated.
  • Gently fold in the fried onions and scallions to the chicken salad for added crunch and flavor.
  • Add salt as needed, adjusting the seasoning to your liking.
  • You can serve this chili oil chicken salad on a bed of greens, in sandwiches, or with crackers.
