Ingredients
  

For the Steak Bites

  • 1-1.25 lbs beef tenderloin cut into 1–1½ inch cubes
  • Salt + black pepper to taste
  • 1 tbsp olive oil
  • 3 tbsp butter
  • 3 cloves garlic minced
  • 1 tsp fresh thyme or ½ tsp dried

For the Tortellini

  • 1 20 oz package cheese tortellini (fresh or refrigerated)
  • 1 tbsp butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¾ cup grated parmesan cheese
  • ½ tsp Italian seasoning
  • Salt + pepper to taste

For Serving

  • Fresh parsley chopped
  • Extra parmesan

Instructions
 

  • Bring a large pot of salted water to a boil. Cook tortellini according to package instructions until tender. Drain and set aside.
  • Pat beef tenderloin cubes dry and place in a bowl. Toss with olive oil, salt, and pepper.
  • Preheat air fryer to 400°F. Add steak bites in a single layer (work in batches if needed) and air fry for 6–8 minutes, shaking halfway through, until browned and cooked to your preferred doneness. Remove and set aside.
  • In a skillet over medium heat, melt butter. Add garlic and thyme and cook for 1–2 minutes until fragrant.
  • Add the hot steak bites and toss to coat in the garlic butter. Remove from heat.
  • In the same skillet, melt butter over medium heat. Add garlic and cook for about 30 seconds until fragrant.
  • Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  • Stir in parmesan cheese, and Italian seasoning. Simmer for 2–3 minutes, until slightly thickened.
  • Taste and season with salt and pepper to your liking.
  • Add cooked tortellini to the sauce and toss until evenly coated and creamy.
  • Spoon into bowls or a serving dish and top with garlic butter steak bites. Spoon any extra garlic butter from the pan over the top.
  • Finish with fresh parsley and extra parmesan. Serve immediately.
