Ingredients
For the Steak Bites
- 1-1.25 lbs beef tenderloin cut into 1–1½ inch cubes
- Salt + black pepper to taste
- 1 tbsp olive oil
- 3 tbsp butter
- 3 cloves garlic minced
- 1 tsp fresh thyme or ½ tsp dried
For the Tortellini
- 1 20 oz package cheese tortellini (fresh or refrigerated)
- 1 tbsp butter
- 3 cloves garlic minced
- 1 cup heavy cream
- ½ cup chicken broth
- ¾ cup grated parmesan cheese
- ½ tsp Italian seasoning
- Salt + pepper to taste
For Serving
- Fresh parsley chopped
- Extra parmesan
Instructions
- Bring a large pot of salted water to a boil. Cook tortellini according to package instructions until tender. Drain and set aside.
- Pat beef tenderloin cubes dry and place in a bowl. Toss with olive oil, salt, and pepper.
- Preheat air fryer to 400°F. Add steak bites in a single layer (work in batches if needed) and air fry for 6–8 minutes, shaking halfway through, until browned and cooked to your preferred doneness. Remove and set aside.
- In a skillet over medium heat, melt butter. Add garlic and thyme and cook for 1–2 minutes until fragrant.
- Add the hot steak bites and toss to coat in the garlic butter. Remove from heat.
- In the same skillet, melt butter over medium heat. Add garlic and cook for about 30 seconds until fragrant.
- Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
- Stir in parmesan cheese, and Italian seasoning. Simmer for 2–3 minutes, until slightly thickened.
- Taste and season with salt and pepper to your liking.
- Add cooked tortellini to the sauce and toss until evenly coated and creamy.
- Spoon into bowls or a serving dish and top with garlic butter steak bites. Spoon any extra garlic butter from the pan over the top.
- Finish with fresh parsley and extra parmesan. Serve immediately.
