Ultra-creamy, cheesy, and packed with rich white cheddar and Gruyère, this homemade mac 'n cheese is the ultimate comfort food that's easy enough for weeknights but indulgent enough for special occasions!
1lbSmall pasta shells or your favorite pasta shape
1/2cupunsalted butter
1/2cupall-purpose flour
4cupswhole milk
3cupssharp white cheddar cheeseshredded
1cupGruyere cheeseshredded
1teaspoondijon mustard or 1/2 teaspoon dry mustard
1teaspoongarlic powder
Salt and pepperto taste
Instructions
Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.
In a large saucepan, melt the butter over medium heat.
Stir in the flour to create a roux. Cook for 1-2 minutes until it forms a paste.
Gradually whisk in the milk, ensuring there are no lumps.
Continue to cook and whisk until the mixture thickens, about 5-7 minutes.
Slowly add the shredded white cheddar and Gruyere cheese to the sauce. Stir until the cheese is melted and the sauce is smooth.
Stir in mustard and garlic powder, and season with salt and pepper to taste.
Add the cooked pasta to the cheese sauce, stirring to coat the pasta evenly.
Serve the creamy white cheddar mac 'n cheese hot.
