Easy Cheesy Oven-Baked Breakfast Taquitos

These Easy Cheesy Oven-Baked Breakfast Taquitos are packed with fluffy eggs, crispy potatoes, savory sausage, and melty cheese—then rolled and baked to golden perfection. A fun, make-ahead breakfast the whole family will love (with optional heat for the spice lovers)!

Ingredients
  

  • 1 pack of flour tortillas
  • 1 potato diced
  • 6 eggs
  • 1 lb breakfast sausage
  • 1/4 cup onion finely chopped
  • 1 jalapeno pepper (optional) seeds removed and finely chopped
  • 1 cup Monterey Jack cheese shredded
  • Salt and pepper to taste
  • Cumin or chipotle powder to taste
  • Cooking spray or olive oil
  • Hot sauce and spicy mayo optional, for serving

Instructions
 

  • Preheat your oven to 425°F and line a baking sheet with parchment paper.
  • In a large bowl, add your diced potatoes, a drizzle of olive oil, salt, pepper, and chipotle powder (optional). Mix until combined.
  • Spread the potatoes evenly on the baking sheet and roast for 20-25 minutes until golden brown.
  • Heat a drizzle of oil in a skillet on medium heat then add onion and jalapeno, stirring occasionally for about 2 minutes. Add the breakfast sausage to the pan and cook through for about 8 minutes, breaking it up with a spatula.
  • Add 6 eggs to the same pan and scramble until just done (they’ll continue cooking in the oven).
  • Add the cooked ingredients, including the potatoes to a large bowl and mix well to combine.
  • Take a flour tortilla and place a spoonful of the filling mixture onto one end then top it with a sprinkle of cheese. Gently roll the tortilla tightly around the filling, forming a taquito. Place the taquito seam-side down on a lightly oiled casserole dish. Repeat the process until all the filling is used.
  • Lightly coat the taquitos with cooking spray or brush them with olive oil. This will help achieve a golden and crispy texture. Place the casserole dish in the preheated oven and bake for approximately 12-15 minutes or until the taquitos are crispy and golden brown.
  • Optional, top with hot sauce and enjoy!

Notes

If you’d like to store your taquitos in the freezer, follow all steps up until step 8. Once you’re ready to bake your taquitos, pull them out of the freezer and let them sit for 30 minutes then follow the same baking instructions in step 8.
