Ingredients
  

  • 2 cups fresh dill leaves packed
  • 1/2 cup fresh parsley leaves packed
  • 1/3 cup pine nuts
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup extra-virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions
 

  • Wash the dill and parsley leaves thoroughly under cold water. Pat dry with paper towels or use a salad spinner to remove excess moisture.
  • In a food processor or blender, combine the fresh dill leaves, parsley leaves, toasted nuts, and grated Parmesan cheese.
  • Pulse a few times to chop the ingredients.
  • With the food processor or blender running, gradually drizzle in the extra-virgin olive oil and lemon juice. Continue blending until the mixture is smooth and well combined.
  • Taste the dill pesto and season with salt and pepper to taste. Adjust the consistency by adding more olive oil if needed.
  • Use immediately as a sauce for pasta, spread for sandwiches, topping for grilled meats or fish, a dip for vegetables, or transfer the dill pesto to a jar or airtight container.
