With this peanut and chicken recipe is a juicy, golden chicken dinner with perfectly tender rice infused with garlic, ginger and just the right touch of sweetness. It’s easy enough for a weeknight and such a great family friendly recipe, too. Everything cooks together in one dish, which means the rice absorbs all the garlicky, gingery broth and peanut sauce while the chicken turns tender and deeply savory.

WHAT IS PEANUT CHICKEN & RICE BAKE?

My peanut chicken rice bake is a one pan oven-baked meal where chicken thighs are baked directly on top of seasoned rice and vegetables, all coated in a creamy peanut sauce.

As it cooks, the chicken releases juices into the rice while the sauce infuses everything with rich, nutty, slightly sweet flavor. Think comfort food meets Asian-inspired flavours in the easiest possible format.

WHY YOU’LL LOVE THIS RECIPE

I love how this recipe turns simple ingredients into something that tastes like you spent hours in the kitchen:

  • It’s a true one-pan dinner with minimal cleanup (I’m obsessed)
  • The rice cooks in the oven and absorbs ALL the flavor
  • The peanut sauce is creamy, savory, slightly sweet and totally addictive
  • It’s weeknight easy but still feels restaurant-worthy
  • Great for meal prep because it reheats beautifully
  • Customisable with extra veg or spice

INGREDIENTS

  • Chicken thighs: Boneless chicken thighs stay juicy and tender while roasting and soak up all the sauce.
  • Jasmine rice: I use long grain rice that becomes fluffy and aromatic as it bakes in the broth.
  • Chicken broth: Use homemade or a good quality store bought.
  • Red bell pepper: Adds sweetness, color and a soft roasted texture.
  • Yellow onion: Brings natural sweetness and savory depth to the base.
  • Garlic: Fresh over powdered for this recipe.
  • Olive oil: It’ll help soften the veggies.
  • Peanut butter: You want a smooth unsweetened peanut butter, rather than a crunchy one.
  • Soy sauce: Adds salty umami depth.
  • Rice vinegar: Brightens and balances, sometimes I’ll use fresh lime juice instead.
  • Honey or brown sugar: Adds some sweetness to the sauce.
  • Sesame oil: Gives a deep, toasted nuttiness.
  • Fresh ginger: Ah, I’m in love with the little zing this adds
  • Sriracha or chili paste (optional): Adds heat if you like a kick.
  • Green onions and lime wedges: Fresh finishing touches that lift the whole dish.

HOW TO MAKE PEANUT CHICKEN & RICE BAKE

Mix the base: In the baking dish, combine the uncooked rice, chicken broth, sliced red pepper, onion, garlic, and olive oil. Stir everything together so the rice is evenly distributed.

Make up the sauce: In a bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, grated ginger, and optional sriracha. Add warm water a little at a time until the sauce is smooth and pourable.

Prep the chicken: Pat the chicken thighs dry and season well with salt and pepper. Nestle the chicken thighs on top of the rice mixture, pressing them in slightly so they sit evenly. Spoon or brush about half of the peanut sauce over the chicken.

Cook the dish: Cover tightly with foil and bake for 25–30 minutes, until the rice is mostly tender.

Baste with sauce: Remove the foil, spoon over the remaining peanut sauce, and bake uncovered for another 10 to15 minutes until the chicken is cooked through and lightly golden. Let it rest for 5 minutes before serving. Finish with sliced green onions and fresh lime juice.

SUBSTITUTIONS AND VARIATIONS

Can I use chicken breasts instead of thighs? Yes, but reduce cooking time slightly and be careful not to overcook so they stay juicy.

Can I make it vegetarian? Yes, swap chicken for chickpeas or tofu and use vegetable broth instead of chicken broth.

Can I use another type of rice? Yes, but cooking times may vary. Brown rice will need extra liquid and longer baking time.

Can I make it less spicy? Absolutely. Just leave out the sriracha or chili paste completely.

STORAGE AND MAKE AHEAD

This Peanut Chicken Rice Bake keeps well in the fridge for up to 4 days. Reheat gently in the microwave or oven with a splash of broth or water to loosen the rice. It also freezes well in portions for up to 2 months, making it perfect for easy future meals.

SERVING AND PAIRING

I love serving this chicken with rice and peanuts with extra lime wedges and a crunchy cucumber salad. It also pairs great with steamed greens like broccoli or green beans to balance the richness of the peanut sauce. For a heartier spread, serve alongside a simple Asian-style slaw.

TIPS AND PROBLEM-SOLVING

  • Don’t skip the foil: It’s essential for steaming the rice properly in the first stage.
  • Check liquid levels: If the rice looks dry halfway through, add a splash of broth.
  • Let it rest: This helps the rice finish absorbing any remaining liquid.
  • Thin your sauce: A little warm water makes the peanut sauce silky and easy to spread.

FREQUENTLY ASKED QUESTIONS

Can I prep this ahead of time?

Yes, you can assemble everything (except the final bake) a few hours ahead and refrigerate.

Why is my rice still hard?

It likely needs a bit more liquid or extra covered baking time depending on your oven.

Can I double the recipe?

Yes, just use a larger dish or two baking trays to ensure even cooking.

What peanut butter works best?

Creamy peanut butter works best for a smooth, rich sauce.
