These Easy Shrimp Sandwiches are light, fresh, and full of flavor, featuring juicy shrimp tossed in a creamy dill dressing and served on buttery toasted Hawaiian rolls — the perfect quick lunch or fun appetizer!
Begin by defrosting shrimp if frozen and pat dry then season with garlic, salt, and pepper.
Heat a skillet over medium heat and drizzle some oil in the pan. Once warm, add shrimp to the skillet and cook until pink, about 2-3 minutes per side.
Chop cooked shrimp into small pieces and place in a mixing bowl.
To the same bowl, add mayonnaise, rice vinegar, scallions, and dill. Mix well to combine.
Spread melted butter onto each Hawaiian roll then toast in the oven for about 3-5 minutes.
Remove the rolls from the oven and place a piece of butter lettuce onto each roll followed by about 1/2 cup of the shrimp mixture.
Enjoy your shrimp sandwiches as a lunch or an appetizer.
