These freezer-friendly breakfast burritos are the perfect grab-and-go meal prep solution—loaded with eggs, sausage, cheese, and beans for a hearty, protein-packed start to your day.

Ingredients
  

  • 10 large eggs
  • 1 tablespoon butter or oil
  • Salt and pepper to taste
  • 1 pound breakfast sausage or bacon cooked and crumbled
  • 15 oz black beans (1 can) drained and rinsed
  • 2 cups cheddar cheese shredded
  • 1 cup salsa
  • 10 large flour tortillas burrito size

Instructions
 

  • In a large skillet, melt the butter or heat the oil over medium heat.
  • In a bowl, whisk the eggs with salt and pepper. Pour into the skillet and cook, stirring occasionally, until the eggs are scrambled and just set. Remove from heat and set aside.
  • Cook the breakfast sausage or bacon until fully cooked and crumbled. Drain excess grease if necessary.
  • Drain and rinse the black beans.
  • Shred the cheese if not already shredded.
  • Prepare any additional ingredients you wish to add.
  • Lay out the tortillas on a clean surface.
  • Divide the scrambled eggs, cooked sausage or bacon, black beans, shredded cheese, salsa, and any additional ingredients evenly among the tortillas, placing the fillings in the center of each tortilla.
  • Fold the sides of the tortilla over the filling, then roll from the bottom up tightly to form a burrito shape. Allow burritos to cool completely at room temperature..
  • Wrap each burrito individually in plastic wrap, then foil. Make sure they are tightly wrapped to prevent freezer burn.
  • Transfer burritos to freezer-safe zip-top bags. Label the bags with the date and contents for easy identification.
  • To reheat, unwrap the plastic wrap and foil from the frozen burrito.
  • Microwave on high for 2-3 minutes, turning halfway through, until heated through.
  • Alternatively, you can reheat in a preheated oven at 350°F (175°C) for about 20-25 minutes, or until heated through.
  • Serve your delicious freezer-friendly Breakfast Burritos with salsa, sour cream, or guacamole on the side, if desired.
