This Freezer-Friendly Chicken Tortilla Soup is a hearty, flavorful meal made with shredded chicken, beans, corn, and spices. Perfect for meal prep, weeknights, and cozy freezer stock-ups!
2cupscooked shredded chickenrotisserie chicken works well
1cupsalsa
Salt and black pepper to taste
Instructions
In a large pot, heat the olive oil over medium heat.
Add the chopped onion and sauté until translucent, about 5 minutes.
Add the minced garlic and chopped jalapeño and cook for another 1-2 minutes, until fragrant.
Stir in the ground cumin, chili powder, and smoked paprika, cooking for an additional 1 minute to toast the spices.
Pour in the chicken broth, diced tomatoes (with their juices), black beans, and corn kernels. Stir to combine.
Add the shredded chicken and salsa, stirring to incorporate.
Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, allowing the flavors to meld.
Season with salt and black pepper to taste.
Allow the soup to cool completely. Transfer the soup to freezer-safe containers or zip-top bags. Label with the date and contents and freeze for up to 3 months.
Notes
Preparation Suggestion: Thaw the soup in the refrigerator overnight. Reheat in a pot over medium heat until warmed through, or microwave in a microwave-safe dish.Serving Suggestion: Enjoy with tortilla strips or crushed tortilla chips, shredded cheese, sliced avocado, chopped cilantro, lime wedges, and sour cream.
