This freezer-friendly tomato soup is rich, creamy (without the cream!), and made with simple pantry staples—perfect for meal prep or cozy lunches straight from the freezer.
In a large pot, heat the olive oil over medium heat.
Add the chopped onion and sauté until translucent, about 5 minutes.
Add the minced garlic and cook for another 1-2 minutes until fragrant.
Stir in the tomato paste and cook for 1-2 minutes.
Add the crushed tomatoes and chicken or vegetable bone broth. Stir to combine.
Add the dried basil, dried oregano, dried thyme, and smoked paprika. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes.
Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth.
Return the blended soup to the pot (if using a regular blender).
Stir in the Greek yogurt until well combined. Season with salt and black pepper to taste.
Allow the soup to cool completely.
Transfer the soup to freezer-safe containers or zip-top bags. Label with the date and contents and freeze for up to 3 months.
Notes
Preparation Suggestion: Thaw the soup in the refrigerator overnight. Reheat in a pot over medium heat until warmed through. If the soup is too thick, add a little broth or water to reach the desired consistency.Serving Suggestion: Enjoy with fresh basil and a grilled cheese, if desired.
