This French Onion Soup Meatloaf is a classic comfort food dinner. It’s loaded with juicy ground beef, caramelized onions and rich Gruyere cheese. All the ingredients come together to make one of my family’s favorite recipes to make over the holidays.
This onion soup meatloaf recipe is hearty, cozy and full of that rich caramelized onion flavor we all love from French onion soup.
WHAT IS FRENCH ONION SOUP MEATLOAF?
French onion soup meatloaf is a delicious mashup of two comfort food classics; the deep, savory flavor of French onion soup meets the tender, juicy texture of homemade meatloaf.
It’s made by mixing onion soup mix and caramelized onions into the meatloaf mixture, then baking it to perfection and topping it with a luscious onion gravy.
If you love onion soup meatloaf recipes, this one will easily become your new go to.
WHY YOU’LL LOVE THIS RECIPE
I love how this onion soup meatloaf recipe turns a simple weeknight dinner into something special. The onion soup mix seasons the beef perfectly, the cheese adds creaminess and the caramelized onions give it that French onion flavor that I LIVE for.
Plus:
- It’s an easy weeknight meal idea that feels fancy.
- I can make it ahead or freeze the leftovers. Such a win when I’m busy and have loads of people coming over.
- The onion gravy makes it irresistible. Seriously.
- French onion soup meatloaf is cozy, satisfying and an absolute family favorite.
INGREDIENTS
- Ground beef: I like to use a lean ground beef in my French onion soup meatloaf.
- Onion soup mix: This adds instant umami and that French onion soup flavor.
- Caramelized onions: These bring sweetness and a rich caramelized onion flavor.
- Panko breadcrumbs: I use these crumbs to bind and keep the loaf tender.
- Eggs: Also for binding and “setting” the mixture for easy slicing.
- Milk: Adds moisture and softness. I also use it in the mashed potatoes.
- Gruyere or Swiss cheese: Creamy, melty and classic in French onion soup.
- Worcestershire sauce: Adds flavor and helps season the meatloaf mix. You’ll need it for the onions, too.
- Yellow onions: I love the way these cook down and turn sweet and soft.
- Butter and olive oil: You’ll need butter in all the elements of this recipe.
- Sugar and balsamic vinegar (optional): To sweeten the onions and balance the flavors.
- Flour: To make the roux for the sauce.
- Beef broth: I like to use a low sodium, really good quality store bought broth. Homemade is great, too.
- Yukon gold potatoes: These come out creamy and buttery when mashed.

HOW TO MAKE FRENCH ONION SOUP MEATLOAF
Caramelize the onions: In a large skillet, I melt butter and olive oil, then add thinly sliced onions. I cook them low and slow until they turn golden brown and sweet.
Season the onions: Once soft and golden, I stir in a pinch of salt, a little sugar and a little balsamic vinegar to deepen the flavor of this French onion soup meatloaf. I set aside half for the meatloaf and save the rest for the gravy.
Mix the meatloaf: In a big bowl, I combine the ground beef, onion soup mix, caramelized onions, breadcrumbs, eggs, milk, cheese, Worcestershire, sal and pepper. I mix gently; overmixing makes it dense.
Shape and bake: I form it into a loaf and bake at 375°F until it’s cooked through and juicy. The smell in the kitchen is incredible!
Make the onion gravy: While it bakes, I melt butter in the same pan used for the onions, whisk in flour, then slowly add beef broth and Worcestershire. I stir in the reserved caramelized onions for a silky, rich onion gravy.
Serve it up: I spoon mashed potatoes on the plate, top with thick slices of the meatloaf and drizzle everything with that golden onion gravy.
SUBSTITUTIONS AND VARIATIONS
Can I make French onion soup meatloaf gluten free?
Yes! Use gluten free breadcrumbs or crushed gluten free crackers. Make sure your onion soup mix and Worcestershire sauce are certified gluten free.
Can I use ground turkey or chicken instead of beef?
Absolutely, both work great if you want a lighter onion soup meatloaf recipe. Add a little extra caramelized onion or cheese to keep it moist.
What can I use instead of breadcrumbs in meatloaf?
Try crushed oats, almond flour, or even mashed potatoes for a gluten-free alternative.
STORAGE AND MAKE AHEAD
I find this onion soup meatloaf keeps well in the fridge for up to 4 days.
I reheat slices in the oven or microwave with a splash of broth to keep them moist. You can also freeze cooked slices (with gravy) for up to 3 months, a lifesaver for easy weeknight meals.
SERVING AND PAIRING
I love serving this French onion soup meatloaf with creamy mashed potatoes and a green vegetable like roasted broccoli or green beans.
It also pairs beautifully with a crisp green salad or crusty bread to soak up the gravy. For a comfort food dinner, nothing beats this combination.
TIPS AND PROBLEM-SOLVING
- Caramelize slowly: Don’t rush the onions, that deep, sweet flavor only develops with time.
- Mix gently: Overmixing can make the meatloaf tough.
- Rest before slicing: Letting it sit for 10 minutes helps the juices redistribute.
- Add extra gravy: It reheats beautifully and makes everything taste even better.
FREQUENTLY ASKED QUESTIONS
Yes! Assemble the loaf up to a day ahead, cover, and refrigerate. Bake when ready to serve.
Definitely. Wrap it tightly and freeze for up to 3 months. Thaw overnight before baking.
Gruyere gives the most authentic French onion soup flavor, but Swiss or even provolone work nicely.
It’s worth it. The onion soup meatloaf is delicious on its own, but the gravy takes it over the top.

- 1 tbsp Worcestershire sauce
- ½ tsp salt
- ¼ tsp black pepper
For the caramelized onions
- 2 large yellow onions thinly sliced
- 1 tbsp butter
- 1 tbsp olive oil
- Pinch of salt
- ½ tsp sugar optional, helps them brown faster
- 1 tbsp balsamic vinegar optional, adds flavor
For the gravy
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 ½ cups beef broth
- ½ cup caramelized onions reserved from above
- 1 tsp Worcestershire sauce
- Salt & pepper to taste
For the mashed potatoes:
- 2 lbs Yukon gold potatoes peeled and cubed
- 4 tbsp butter
- ½ cup milk or more to reach desired texture
- Salt & pepper to taste
Instructions
- In a large ovenproof skillet (cast-iron works well), melt the butter and olive oil over medium-low heat. Add the thinly sliced onions.
- Cook the onions, stirring occasionally, for about 25-30 minutes or until they are soft, deeply caramelized, and have turned a rich golden brown color. Don’t rush this step; slow caramelization is key to developing the sweet onion flavor.
- Season with sugar, salt, pepper, and balsamic glaze if using. Cook for another 5-10 minutes then remove from heat. Set aside ½ cup for the meatloaf and ½ cup for the gravy.
- Preheat oven to 375°F.
- In a large bowl, combine ground beef, onion soup mix, caramelized onions, panko, eggs, milk, Gruyère, Worcestershire, salt, and pepper.
- Mix gently until combined.
- Form into a loaf shape and place on a parchment-lined baking sheet or in a loaf pan.
- Bake for 45–55 minutes, until internal temperature reaches 160°F. Let rest 10 minutes before slicing.
- In the same skillet used for the onions, melt butter over medium heat.
- Whisk in flour and cook 1–2 minutes until lightly golden.
- Slowly whisk in beef broth and Worcestershire; simmer 3–5 minutes until thickened.
- Stir in reserved caramelized onions. Season with salt and pepper.
- While the meatloaf bakes, cook potatoes in salted water until fork-tender (about 12–15 minutes).
- Drain, then mash with butter and milk. Season to taste with salt and pepper.
- Spoon mashed potatoes onto a plate, top with thick slices of French onion meatloaf, and drizzle generously with caramelized onion gravy.
- Finish with a sprinkle of fresh thyme or parsley for color if you’d like.
