Ingredients
- 8 oz linguine
- 1 lb shrimp peeled & deveined, fresh or frozen
- 2 tablespoons olive oil
- 4 cloves garlic minced
- Juice and zest of 2 lemons
- 1/2 cup Parmesan grated
- Salt and black pepper to taste
- red pepper flakes optional, for heat
- fresh parsely optional, for garnish
Instructions
- Cook the pasta according to package directions. Reserve 1/2 cup of the pasta water before draining.
- While the pasta cooks, heat olive oil in a large skillet over medium heat.
- Add garlic and cook for 30 seconds until fragrant, then toss in the shrimp.
- Season with salt, pepper, and red pepper flakes if using. Cook shrimp for 2–3 minutes per side until pink and opaque.
- Turn off the heat and add the reserved pasta water to the skillet along with the grated Parmesan. Stir to combine.
- Add the drained pasta to the skillet, then toss with lemon juice and zest.
- Garnish with chopped parsley and more parmesan if desired.
