I like the way the creamy, grinder-style dressing ties all the salad ingredients together. It’s so delicious. Mustard, mayo, vinegar and spices are perfect with the meats and cheeses.

This salad is endlessly versatile. Make it for lunch or dinner, take it to a picnic, potluck or just enjoy it as an easy midweek meal.It’s a crowd-pleaser that feels rich and satisfying but is also really light, fresh, and colorful.

INGREDIENTS NEEDED TO MAKE GRINDER PASTA SALAD

I like to use a short pasta in my Grinder Pasta Salad – something like rotini, fusilli or penne all work well. In terms of lettuce, go for crunch! Leaves like shredded iceberg or romaine lettuce are my favorites.

I used red onion in this chopped Grinder Pasta Salad. It’s mild, a little sweet and perfectly crunchy. I prefer it to white onion, which is a bit too strong and overwhelming. Adding the Pepperoncini and little of its juice is my favorite part.

HOW TO MAKE GRINDER PASTA SALAD

This is my easy method for making this Grinder Pasta Salad:

Cook your pasta

Cook your pasta until it’s just done – al dente. Once it has cooked, drain it in a colander and rinse it under cold running water to stop the cooking process. Set it aside.

Prepare the dressing

Whisk up the mayonnaise, red wine vinegar, pepperoncini juice, mustard and the seasonings. Taste and adjust the seasoning if you need to.

Mix the salad

To a mixing bowl, add the following: Cooled pasta, cut up meats and cheeses, veggies and pepperoncini. Toss these ingredients together with the dressing until well coated.

Finish off the salad before serving

When you’re ready to serve your simple Grinder Pasta Salad, add in the lettuce, some extra parmesan cheese and pepperoncini juice.

Chill the salad before serving it

I love to enjoy my Grinder Pasta Salad chilled. If you have extra time, pop it into the fridge for about 30 minutes before serving it. The flavors will deepen with the extra time as well.

SUBSTITUTIONS AND VARIATIONS

If you’re missing one or two ingredients or want to switch this Italian grinder pasta salad recipe up a bit, here are a few ideas:

  • Pasta swaps: Try other short pasta shapes like shells or farfalle (bow-tie pasta). I try to use a pasta with little ridges that grip onto the Grinder dressing. You can use a wholewheat or gluten free pasta if you like. 
  • Veggies: Add in some crunchy, diced cucumber or bell peppers. Swap out the lettuce for arugula, baby spinach or a spring mix of leaves.
  • Protein and cheeses: Swap out the meats and try making this Grinder Pasta Salad with prosciutto, roast beef (a great way to use leftovers) or turkey. Grilled chicken or canned tuna will give you a very different flavor but the salad will be really good. Try this recipe with pepper Jack, white cheddar or feta cheese if you like!
  • Dressings: Use a thick Greek yogurt or sour cream instead of the mayo for a lighter dressing. Sometimes I like to add a little pesto or sundried tomato pasta for a richer flavor.

STORAGE AND MAKE AHEAD

This Grinder Pasta Salad is a good make ahead option, especially for meal prep or ahead of a party. You can mix up the salad up to 24 hours ahead. Keep your salad in an airtight container in the fridge but wait to add in the lettuce so it stays lovely and fresh.

Leftover Grinder Pasta Salad will keep for 3 or 4 days. Add in a little extra dressing if it seems a bit dry.

SERVING AND PAIRING

Serve your Grinder Pasta Salad as a main dish or for an easy dinner. It’s great for picnics or potlucks.

Ingredients
  

For the Pasta Salad

  • 1 lb short cut pasta shells, rotini, fusilli, or penne
  • 1 cup cherry tomatoes halved or quartered
  • 1 cup shredded iceberg or romaine lettuce
  • 1/2 red onion thinly sliced
  • 1/2 cup chopped pepperoncini plus a little juice
  • 1/2 cup Genoa salami diced
  • 1/2 cup ham diced
  • 1/2 cup provolone cheese diced
  • 1/2 cup parmesan grated

For the Grinder Dressing

  • 1/2 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 1 tablespoon pepperoncini juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Cook the pasta according to package instructions. Drain and rinse under cold water to stop the cooking and cool it down. Set aside.
  • In a small bowl, whisk together mayo, red wine vinegar, pepperoncini juice, mustard, and all seasonings. Taste and adjust to your liking—add more vinegar for tang, more mayo for creaminess.
  • In a large mixing bowl, combine cooled pasta, chopped meats, cheeses, veggies, and pepperoncini. Add the dressing and toss to coat everything evenly.
  • Fold in lettuce just before serving to keep it crisp. Optional, top with extra parmesan or a drizzle of pepperoncini juice.
  • Chill for 30 minutes if time allows.
