My beef mac and cheese casserole is a cozy baked casserole that blends creamy cheddar mac and cheese layered over a rich, savory ground beef and vegetable filling. I’m completely in love with this hearty dinner and so is my family! 

It’s warm, satisfying and exactly the kind of meal that feels like a hug after a long day. I’ve got to say, I always make extra and eat the leftovers for lunch throughout the week, same goes for Ruby!

I first started making this mac and cheese with ground beef recipe when I wanted a dinner that felt indulgent but was still super practical. Something I could prep ahead, slide into the oven and serve without juggling loads of pans. You know the story! It quickly became a go-to in our home. I think you’ll love how comforting, filling and incredibly reliable it is when you need a recipe that absolutely everyone’s going to love. Every time. 

The inspiration comes from classic cottage pie flavors partnered with the creamy magic of homemade mac and cheese. Yum! Instead of mashed potatoes, the beefy, saucy base is topped with velvety macaroni coated in a sharp cheddar cheese sauce. I feel like its such a beautifully balanced meal: savory and rich on the bottom, creamy and cheesy on top, with bubbling edges and a golden finish. All in 20 minutes!

Total comfort: My beef mac and cheese casserole gives me everything I want from a cozy casserole. Savory ground beef, tender vegetables and a creamy cheese topping make every bite super satisfying without being too heavy.

A go-to for busy nights or make ahead meals: This is an ideal prep ahead dinner. I love to put the entire dish earlier in the day (or even the night before) and bake when i’m ready.

Family friendly and flexible: This macaroni and cheese and ground beef dish is forgiving and I’ll often adapt it based on what I have in the fridge. I’ll sometimes switch up the protein, add in extra veggies or change up the cheese blend.

INGREDIENTS

For the Meat and Vegetable Filling

  • Ground beef: This is the classic choice for cottage pie. You can also use a mixture of beef and lamb or just lamb mince for a Shepherd’s pie version.
  • Olive oil: This helps soften the vegetables. You can also use avocado oil.
  • Veggies and aromatics: I used onion, garlic, frozen peas and carrots.
  • Tomato paste: This adds richness and makes it super savory. I wouldn’t skip it!
  • Red wine (optional): Brings out flavor and deglazes the pan beautifully.
  • Worcestershire sauce: Adds umami and classic cottage pie flavor in this beef mac and cheese casserole.
  • Flour and beef broth: You’ll need this combo to thicken the filling into a hearty, spoonable sauce.
  • Thyme, smoked paprika, salt and pepper: These are the perfect seasonings and flavorings for this recipe.

For the Mac and Cheese

  • Elbow macaroni or shells: Perfect for catching all that creamy cheese sauce; any smallish pasta will do.
  • Butter and flour: The base of a classic roux for silky mac and cheese.
  • Whole milk: This creates a rich, creamy sauce.
  • Sharp cheddar and mozzarella: Cheddar is loaded with flavor and the mozzarella adds stretch and creaminess.
  • Garlic powder and mustard powder (or Dijon): Boosts the cheese flavor without overpowering it.

For the Topping

  • Extra shredded cheddar: For a golden, bubbly finish.
  • Fresh parsley: Adds a pop of freshness and color to this mac and cheese with ground beef.
  • Crushed Ritz crackers or panko (optional): For a crispy topping if you love texture.

HOW TO MAKE MAC AND CHEESE COTTAGE PIE

Cook the meat filling: Start by sauteing the onion and carrots in olive oil until they’re soft. Next, add the garlic, then brown the ground beef. Stir in the tomato paste and let it deepen in color before adding red wine, if using. Sprinkle in the flour, then pour in the beef broth and Worcestershire sauce. Simmer until thick and saucy, then fold in the peas and seasonings.

Prepare the mac and cheese: I recommend cooking the pasta until just al dente (with a little bite to it) and setting aside a little pasta water. Make a roux with butter and flour, whisk in the milk until the sauce has thickened, then stir in the cheeses and seasonings. Combine with the pasta and pasta water until creamy and spoonable.

Assemble and bake: Lastly, spread the meat filling into a greased baking dish and top it evenly with the mac and cheese. Add extra cheddar and the optional crunchy topping (I love it). Bake until bubbling and golden, then let it rest for a few minutes before serving.

SUBSTITUTIONS AND VARIATIONS

My beef mac and cheese casserole is 100% adaptable. You can swap the ground beef for ground turkey or lamb. For a vegetarian version, I’ll replace the beef with lentils or mushrooms and use veggie broth.

Changing up the cheese blend works, too. Try Gruyère, Monterey Jack or even smoked cheddar in the mac and cheese layer. You can also add extra vegetables like corn, spinach or mushrooms to the filling.

For the most incredible, crunchy topping, I love to top my mac and cheese with ground beef recipe with buttery breadcrumbs or crushed crackers before baking.

STORAGE AND MAKE-AHEAD

Make ahead: Beef mac and cheese casserole is ideal for meal prep. I like to assemble the casserole, cover it tightly and refrigerate it for up to 24 hours before baking it.

Storing leftovers: Leftovers keep really well in the fridge for up to four days. I then reheat individual portions in the microwave or warm the full dish in the oven at 325F until heated through.

Freezing: You can also freeze the baked casserole for up to two months. Thaw overnight in the fridge before reheating.

SERVING AND PAIRING SUGGESTIONS

This mac and cheese cottage pie is great on its own, but it goes really beautifully with a simple green salad or steamed vegetables to balance the richness. A side of roasted broccoli or green beans works especially well, too.

For a cozy night in, I like to serve it with crusty bread and a glass of red wine. For family dinners, it’s perfect as-is; no extras needed!

TIPS AND PROBLEM SOLVING

Need to thicken it up? If your cottage pie feels too loose, let it simmer longer before assembling; the filling should be thick and saucy, not runny.  

Too stiff? If the mac and cheese seems stiff, add a splash of reserved pasta water before spreading.

Keep an eye on the topping: If the top browns too quickly, loosely tent with foil and remove near the end for a golden finish.

Ingredients
  

For the Meat and Vegetables

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small yellow onion diced
  • 2 carrots diced
  • 2 garlic cloves minced
  • 1 tbsp tomato paste
  • 1/4-1/3 cup red wine optional
  • 1 tbsp Worcestershire sauce
  • 1 cup frozen peas
  • 1 tbsp flour
  • 1 cup beef broth
  • ½ tsp kosher salt plus more to taste
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • ¼ tsp smoked paprika

For the Mac and Cheese

  • 8 oz elbow macaroni or small shells
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk whole milk ideal
  • 1 cup sharp cheddar shredded
  • 1 cup mozzarella shredded
  • ¼ cup pasta water reserve from boiling the noodles
  • ½ tsp garlic powder
  • ½ tsp mustard powder or 1 tsp Dijon
  • Salt and pepper to taste

For Topping

  • 1/2 cup shredded cheddar
  • fresh parsley chopped
  • Crushed Ritz or panko optional, for extra crunch

Instructions
 

  • Preheat oven to 400°F.
  • Heat olive oil in a large skillet over medium-high. Add onion + carrots and cook 4–5 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  • Add ground beef and cook until browned, breaking it up as it cooks.
  • Stir in tomato paste; cook 1 minute until the tomato paste deepens in color.
  • Add ¼–⅓ cup red wine and simmer 3–4 minutes, scraping up any browned bits, until mostly reduced.
  • Sprinkle flour over the mixture and stir to coat.
  • Pour in beef broth + Worcestershire and stir until thickened, 2–3 minutes.
  • Add peas, thyme, paprika, salt, and pepper.
  • Simmer on low while you prep the mac. (It should be thick and saucy, not runny.)
  • Transfer to a greased 9×9 or 9×13 baking dish.
  • To make the mac and cheese, cook pasta in salted water until just al dente. Reserve ¼ cup pasta water.
  • In a pot, melt butter over medium heat. Stir in flour and cook 1 minute.
  • Slowly whisk in the milk until smooth and thickened.
  • Add garlic powder, mustard, salt, and pepper.
  • Slowly stir in cheddar and mozzarella until melted and creamy.
  • Add the pasta and reserved pasta water and mix until velvety.
  • The topping should be spoonable—not too stiff, not too runny.
  • Spread the mac and cheese evenly over the meat filling.
  • Optional: sprinkle with extra cheddar and either crushed Ritz crackers or panko for texture.
  • Bake at 400°F for 20–25 minutes, until the edges are bubbling.
  • Optional, broil for 1–2 minutes for that golden, bubbly mac top (don’t walk away!).
  • Let cool 5–10 minutes for clean slices.
  • Garnish with parsley, if using.
