Ingredients
  

For the Air Fried Chicken Tenders

  • 1 lb chicken tenders
  • 1 cup panko breadcrumbs
  • 1 cup parmesan cheese grated
  • 2 large eggs beaten
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray

For the Coleslaw

  • 2 cups shredded cabbage or coleslaw mix
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

For the Honey Mustard Sauce

  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 tablespoon honey
  • Salt and pepper to taste

For Assembling

  • 8 small flour or corn tortillas

Instructions
 

  • Preheat your air fryer to 400°F (200°C).
  • Season the chicken tenders with salt and pepper.
  • Set up a breading station with two shallow bowls: one with panko breadcrumbs and parmesan mixed with paprika, garlic powder, onion powder, salt, and pepper, and one with beaten eggs.
  • Dredge each chicken tender in eggs, then coat evenly with the panko parmesan mixture, pressing gently to adhere.
  • Lightly spray the air fryer basket with cooking spray. Place the breaded chicken tenders in a single layer in the air fryer basket, making sure they are not overcrowded.
  • Air fry for 8-10 minutes, flipping halfway through, or until the chicken tenders are golden brown and cooked through.
  • Place the shredded cabbage (or coleslaw mix) in a large bowl.
  • In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper to make the coleslaw dressing.
  • Pour the dressing over the cabbage and toss until well coated. Set aside.
  • In a small bowl, whisk together the mayonnaise, Dijon mustard, whole grain mustard, honey, salt, and pepper until smooth and well combined. Set aside.
  • Warm the tortillas according to package instructions.
  • Place a spoonful of the coleslaw mixture on each tortilla.
  • Top with an air fried chicken tender.
  • Drizzle with honey mustard sauce and serve the air fried chicken tender tacos immediately.
