For the Taquitos

  • 8 flour tortillas
  • 2 cups boneless skinless chicken breast cooked and shredded
  • 4 ounces cream cheese softened
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 6 slices cooked bacon chopped
  • 3/4 cup shredded cheddar cheese
  • 1/2 cup Parmesan cheese grated
  • 3 diced jalapenos
  • 1 teaspoon garlic powder
  • Cooking spray

For the Crema

  • 1/2 cup sour cream
  • 1 lime zested
  • Salt to taste

Instructions
 

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the shredded chicken, softened cream cheese, shredded cheddar cheese, Parmesan cheese, sour cream, mayonnaise, chopped bacon, diced jalapenos, and garlic powder. Mix well until all the ingredients are evenly incorporated.
  • Lay a tortilla flat on a clean surface. Spoon a generous amount of the chicken, bacon, and cheese mixture onto the tortilla’s bottom third. Roll the tortilla tightly, starting from the bottom, to form a taquito. Place it seam-side down on the prepared baking sheet. Repeat this process with the remaining tortillas and filling.
  • Lightly spray the taquitos with cooking spray, ensuring they are evenly coated. This will help them crisp up in the oven.
  • Bake the taquitos in the preheated oven for 15-20 minutes or until they are golden brown and crispy.
  • While the taquitos are baking, prepare the lime sour cream by combining the sour cream, lime zest, lime juice, and salt in a small bowl. Mix well until the ingredients are thoroughly combined. Adjust the seasoning according to your taste.
  • Once the taquitos are done, remove them from the oven and let them cool slightly. Serve them warm with a side of the zesty lime sour cream dip.
