HOW TO MAKE PERUVIAN CHICKEN THIGHS WITH GREEN SAUCE
Make the Peruvian Chicken Marinade
Whisk together the olive oil, lime juice, soy sauce, vinegar, minced garlic, cumin, smoked paprika, oregano, chili powder, salt, and pepper. This is the classic flavor base for Peruvian chicken thighs – smoky, tangy, garlicky, and deeply savory.
Add the chicken and toss to coat. Let it marinate for at least 30 minutes, or ideally overnight.
Prep the Potatoes
On a sheet pan, toss halved baby potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread into an even layer.
Add the Chicken Thighs
Nestle the marinated chicken thighs around the potatoes, pouring any extra marinade on top. This helps everything caramelize in the oven.
Roast
Bake at 425°F for 35–40 minutes, flipping the chicken once. The thighs should be golden, tender, and lightly charred on the edges. For extra crispiness, broil the last 2–3 minutes.
Blend the Green Sauce
In a blender, combine cilantro, jalapeño, garlic, mayo/yogurt, lime juice, vinegar, olive oil, Parmesan, and salt. Blend until smooth and vibrant green. Adjust with water for a thinner drizzle. This sauce is magic. Save extra for dipping potatoes, drizzling over bowls, or spooning onto tacos.
Serve
Plate the roasted chicken and potatoes, drizzle everything with green sauce, and serve with lime wedges. Add a simple salad or rice on the side for a complete meal.

TIPS FOR PERFECT PERUVIAN CHICKEN
Use thighs for maximum flavor
Thighs stay juicy and soak up the marinade beautifully, but you can easily make Peruvian chicken breasts if you prefer lighter meat (just reduce cooking time).
Don’t skip the lime
Acid is essential for authentic Peruvian-style chicken — it brightens the whole dish.
Blend the sauce on high
Aji verde should be smooth and creamy, not chunky.
Let the chicken marinate longer for deeper flavor
Overnight = restaurant-level results.

Hi! Just saw your video on this recipe on YouTube. I am definitely going to try it!! So excited! I have a question, where did you learn to cook this and the other Mexican dishes? I’m Mexican and I want to learn how to cook delicious Mexican food but feel ashamed to ask my family. How did you learn? Maybe you have some tips for me?
Thanks!
Hi! Thank you so much for being here, and I’m so glad the recipe caught your eye! 🥰
I totally understand how intimidating it can feel to ask family about cooking. For me, I learned a lot simply by cooking my way through different recipes, watching videos of people who specialize in those cuisines, and reading about the techniques and ingredients that make those dishes so special.
A little tip that helped me: start with one dish you love and make it a few times. Each time, adjust and get to know the flavors. That process alone teaches you so much! And don’t be afraid to ask questions – whether it’s from family, friends, or online communities. Most people love sharing the foods that mean something to them. 💛
You’ve got this, and I’m cheering you on! Let me know if you try the recipe!
As soon as I saw this recipe, I knew it was a must try! It was very easy recipe to follow and allowed me to use many seasonings I already had. I marinated the chicken the evening before, and the potatoes I cut up in advance and soaked in salt/lemon juice water to save me prep time after I got off work! It turned out so yummy. After having for dinner, my boyfriend requested I add it to the “repeated meals list” ☺️. Definitely will be making again! Would be easy and impressing for a larger group you are hosting!
Thank you so much for taking the time to leave this, it made my whole day! 😭💗 I love the way you prepped everything ahead – genius with the potatoes! And I’m so happy to hear it made the “repeated meals list,” that seriously means everything to me. Can’t wait to hear what you make next!
