Ingredients
- 2 cups BBQ pulled pork cooked and shredded
- 4 large flour tortillas
- 1 cup Mexican cheese shredded
- 1/4 cup corn charred
- 1 jalapeno diced
- 1/4 cup fresh cilantro chopped
- 1/4 cup BBQ sauce
- Cooking oil or butter for cooking
Instructions
- Heat a large skillet or griddle over medium heat.
- Place one tortilla on the skillet and sprinkle half of the shredded cheese evenly over the tortilla.
- Spread half of the shredded BBQ pulled pork on top of the cheese.
- Sprinkle diced jalapeno and charred corn over the pulled pork.
- Drizzle about 2 tablespoons of BBQ sauce over the top.
- Place another tortilla on top to cover the filling.
- Cook the quesadilla for about 2-3 minutes on each side, or until the tortilla becomes golden brown and crispy, and the cheese is melted.
- Remove the quesadilla from the skillet and transfer it to a cutting board. Let it cool for a minute, then slice it into wedges and sprinkle cilantro on top.
- Repeat the process with the remaining ingredients to make the second quesadilla.
- Serve the BBQ Pulled Pork Quesadillas hot with additional BBQ sauce or your favorite dipping sauce.
