Saucy Pork Tacos with Peach Pico de Gallo

Ingredients
  

For the Pork

  • 1 tablespoon olive oil
  • 1 pound ground pork
  • 1 packet Taco seasoning mix
  • 2 tablespoons tomato paste
  • 1 packet taco seasoning mix
  • ½ cup chicken broth
  • 1 tablespoon apple cider vinegar

For the Pico de Gallo

  • 1 ripe peach diced
  • 2 roma tomatoes diced
  • 1/4 cup red onion finely chopped
  • 1 jalapeño seeds removed and finely chopped
  • 2 cloves garlic minced
  • 1/4 cup fresh cilantro chopped
  • 1 lime
  • ½ tsp Tajín (or more to taste)
  • Salt and pepper to taste

For the Lime Crema

  • 3 tbsp sour cream or crema
  • 2 tsp lime juice
  • pinch of salt

For Assembling

  • 8 Soft tortillas corn or flour
  • 1 cup Mexican Cheese shredded
  • Fresh cilantro leaves for garnish
  • Lime wedges for serving

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add ground pork and cook, breaking it apart with a spoon, until browned and cooked through.
  • Stir in the tomato paste and cook for 2–3 minutes, allowing it to darken slightly and develop flavor.
  • Add the taco seasoning. Stir to coat the pork.
  • Pour in the chicken broth and apple cider vinegar. Reduce heat to medium and simmer for 5–7 minutes, until the mixture thickens slightly and becomes saucy.
  • In a bowl, combine diced peaches, diced tomatoes, finely chopped red onion, jalapeno, garlic, and chopped cilantro. Squeeze lime juice over the mixture and gently toss. Season with Tajín, salt and pepper to taste. Refrigerate until ready to use.
  • In a small bowl, combine sour cream, lime juice, and salt. Refrigerate until ready to use.
  • Warm the tortillas according to package instructions.
  • Sprinkle Mexican cheese onto the tortilla then spoon a generous portion of the saucy pork onto each tortilla. Top with a spoonful of the peach pico de gallo, drizzle lime crema on top, and garnish with fresh cilantro leaves.
  • Serve with lime wedges on the side for an extra zing.
