Sesame Soy Chicken

This Sesame Soy Chicken is tender, juicy, and glazed in a sticky-sweet sauce made with soy, garlic, ginger, and honey. Pan-seared to golden perfection and served over rice, it’s a quick and flavorful weeknight dinner the whole family will love.

Ingredients
  

  • 2 lb boneless skinless chicken breasts cut into bite-sized pieces
  • 2 cloves garlic minced
  • 3 tablespoons coconut aminos or low-sodium soy sauce
  • 1 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 tablespoons olive oil

For Serving

  • 2 cups cooked rice for serving
  • 1 tablespoon rice vinegar
  • 4 cups broccoli chopped into bite-sized pieces
  • 2 green onions thinly sliced
  • 1 tablespoon sesame seeds for garnish (optional)
  • salt to taste

Instructions
 

  • In a bowl, whisk together the coconut aminos, honey, minced garlic, and sesame oil. This will be your soy glaze and marinade.
  • Place the cubed chicken breasts in a resealable plastic bag or a shallow dish.
  • Pour the soy glaze over the chicken. Seal the bag or cover the dish and marinate in the refrigerator for at least 10-30 minutes, or up to 4 hours for the best flavor.
  • Remove the chicken from the marinade and let any excess marinade drip off.
  • Heat a skillet over medium-high heat. Add chicken and cook for 6–8 minutes, flipping until browned and cooked through. If you want a thicker glaze, stir in 1 teaspoon of cornstarch mixed with a splash of water in the last minute of cooking.
  • Remove the chicken from the skillet and let it rest for a few minutes.
  • While the chicken is resting, add the broccoli to the skillet and cook uncovered for 1 minute. Cover with a lid and cook for 2 minutes, checking to make sure the broccoli isn't burning. Remove the lid and stir the broccoli then cover for another 1-2 minutes until broccoli is tender.
  • Season your cooked rice with salt and optionally, add 1 tablespoon of rice vinegar for flavor then fluff with a fork.
  • Arrange your sesame soy chicken over the bed of rice along with the cooked broccoli.
  • Garnish with sliced green onions and sesame seeds if desired.
