Ingredients
- 1 rotisserie chicken picked and shredded (about 3 cups)
- 1 15 oz can black beans drained and rinsed
- 1 15 oz can corn drained
- 1 15 oz can fire-roasted diced tomatoes
- 1 10 oz can enchilada sauce (red or green)
- 4 cups low-sodium chicken broth
- 1 small onion diced
- 2 cloves garlic minced
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- ½ tsp oregano
- Salt + pepper to taste
- 1 cup plain Greek yogurt
- 1/2 cup cottage cheese
- 1/2 cup cheddar or Monterey Jack cheese shredded
- Juice of 1 lime
- Optional toppings: diced avocado, cilantro, jalapeños, extra cheese
Instructions
