Ingredients
  

For the Fry Sauce

  • 1/4 cup mayonnaise
  • 1-2 tablespoons ketchup
  • 1 1/2 teaspoons dill pickle juice
  • 1/2 teaspoon yellow mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Kosher salt to taste
  • Freshly ground black pepper to taste

For the Quesadillas

  • 1 pound ground beef
  • Garlic powder to taste
  • Onion powder to taste
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 1 cup cheddar cheese shredded
  • 8 flour tortillas
  • 2 tablespoons olive oil

Optional Toppings

  • 1 roma tomato diced
  • 1/4 cup white onion diced
  • 1/2 cup lettuce chopped
  • 1/4 cup dill pickles diced

Instructions
 

  • In a small bowl, combine mayonnaise, ketchup, pickle juice, mustard, garlic powder, onion powder, salt, and pepper. Mix well until smooth. Adjust seasoning according to taste. Set aside.
  • Take a handful of the beef mixture (about 1/4 cup) and evenly spread it over the tortillas, ensuring it reaches the edges.
  • Preheat a griddle or skillet to 350°F.
  • Drizzle olive oil onto the pan then sear the quesadillas with the meat side down for about 5 minutes.
  • Flip them over, top with a sprinkle of cheddar cheese and another tortilla.
  • Sear for an additional 4 minutes.
  • Flip again and sear for about 1 minute to ensure the cheese is melted and the tortilla is browned, then remove from heat.
  • Repeat this process for all the quesadillas.
  • Serve your quesadillas with tomatoes, onions, lettuce, pickles, and fry sauce on the side for dipping.
