These Taco Stuffed Air-Fried Sweet Potatoes are the perfect mash-up of cozy and crave-worthy — crispy on the outside, fluffy on the inside, and piled high with zesty beef, cheese, guacamole, and sour cream!
Using a fork, poke holes into the skin of the sweet potatoes.
Coat sweet potato skins completely with oil and salt.
Place potatoes into the air fryer and cook for 35-40 minutes and the sweet potato is easily pierced with a fork.
While the potatoes cook, brown the ground beef.
Once cooked, add the taco seasoning and cook according to package.
To assemble the sweet potato, slice them in half length-wise. Using a fork, fluff some of the potato, leaving it inside of the skin.
Split the ground beef evenly between potatoes then top evenly with shredded cheese.
Next, top with guacamole and sour cream.
Enjoy Taco Stuffed Air-fried Sweet Potatoes warm.
