Ingredients
  

For the Sweet Potatoes

  • 2-4 sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt

For the Taco Filling

  • 1 lb. ground beef
  • 1 packet taco seasoning
  • 1/2 cup Mexican blend cheese shredded
  • 1/4 cup Guacamole for topping
  • 2 tablespoons Sour cream for topping
  • 2 tablespoons cilantro for garnish

Instructions
 

  • Preheat the air fryer to 400 degrees.
  • Using a fork, poke holes into the skin of the sweet potatoes.
  • Coat sweet potato skins completely with oil and salt.
  • Place potatoes into the air fryer and cook for 35-40 minutes and the sweet potato is easily pierced with a fork.
  • While the potatoes cook, brown the ground beef.
  • Once cooked, add the taco seasoning and cook according to package.
  • To assemble the sweet potato, slice them in half length-wise. Using a fork, fluff some of the potato, leaving it inside of the skin.
  • Split the ground beef evenly between potatoes then top evenly with shredded cheese.
  • Next, top with guacamole and sour cream.
