Tater Tot Taco Cups are a fun and easy appetizer or snack, loaded with seasoned beef, melted cheese, crispy tater tots, and your favorite taco toppings. Perfect for game days, parties, or weeknight treats!
Preheat your oven to 425°F (220°C). Grease a mini muffin tin with non-stick cooking spray.
In a skillet over medium heat, cook the ground beef until browned and cooked through, breaking it apart with a spoon as it cooks.
Drain any excess grease from the skillet.
Add the taco seasoning mix to the cooked ground beef according to the packet instructions. Stir well to combine.
Place 4-5 tater tots in each cup of the mini muffin tin, pressing it down slightly to form a cup shape.
Spoon a small amount of the seasoned ground beef into each tater tot cup, filling it about halfway.
Sprinkle shredded cheddar cheese over the ground beef in each cup, dividing it evenly.
Bake the mini taco tater tot cups in the preheated oven for 12-15 minutes, or until the tater tots are golden brown and crispy, and the cheese is melted and bubbly.
Remove the mini taco tater tot cups from the oven and let them cool in the muffin tin for a few minutes.
Carefully remove the tater tot cups from the muffin tin and transfer them to a serving platter.
Top each mini taco tater tot cup with a small spoonful of salsa and a dollop of sour cream.
Garnish with chopped fresh cilantro and sliced black olives, if desired.
Serve immediately, and enjoy your delicious mini taco tater tot cups as a fun and flavorful appetizer or snack!
