Prepare the tortillas: Preheat the oven to 350°F and lightly oil an 8-inch round baking dish. If the tortillas feel stiff, lightly dip them in water to soften, then pat dry. Cut each tortilla in half.
Cook the beef filling: Spoon the beef mixture into the center of each tortilla half. Top with shredded cheddar. Fold into triangles, pressing gently to seal.

- 8 oz cheddar cheese shredded

- 1/4 cup mayonnaise
- 1 tbsp ketchup
- 1/2 tbsp yellow mustard
- 1/2 tbsp sweet pickle relish
- 1/2 tsp white vinegar
- 1/2 tsp sugar
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions
- Heat a pan over medium-high heat. Add diced onion and cook for 4-6 minutes until translucent. Add garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook, breaking it up, until browned and cooked through. Drain excess grease if needed.
- Stir in Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Cook for 2–3 minutes, until the beef is glossy and slightly saucy. Remove from heat.
- Preheat oven to 350°F. Lightly oil an 8' round baking dish.
- If tortillas feel stiff, lightly dip them in water to soften. Be sure to remove excess water to avoid them getting soggy then cut each tortilla in half.

- Once the pockets are out of the oven, let cool slightly then serve with the dipping sauce on the side.
