Easy Dan Dan Noodles

Ingredients
  

For the Sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons Tahini
  • 2 tablespoons Chinese black vinegar
  • 1 tablespoon sugar
  • 1 tablespoon chili oil adjust to your spice preference
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 2 tablespoons vegetable or peanut oil

For the Ground Pork

  • 1/2 pound ground pork
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine Chinese rice wine or dry sherry
  • 1 teaspoon cornstarch

For Assembling

  • 8 ounces Chinese egg noodles or any other thin noodles
  • 2 green onions chopped, for garnish
  • 1/2 cup unsalted peanuts chopped, for garnish

Instructions
 

  • In a bowl, mix together soy sauce, Tahini, Chinese black vinegar, sugar, chili oil, minced garlic, and grated ginger.
  • Heat vegetable or peanut oil in a small saucepan until hot but not smoking. Pour the hot oil over the sauce mixture. Stir well to combine. Set aside.
  • In a bowl, combine ground pork with soy sauce, Shaoxing wine (or dry sherry), and cornstarch. Mix well.
  • In a pan over medium heat, cook the seasoned ground pork until browned and cooked through. Break it into small pieces as it cooks. Set aside.
  • Cook the Chinese egg noodles or any other thin noodles according to the package instructions. Drain and set aside.
  • Place a portion of cooked noodles in a serving bowl.
  • Spoon a generous amount of the prepared sauce over the noodles.
  • Top with the cooked ground pork.
  • Garnish the Dan Dan Noodles with chopped green onions and crushed peanuts.
  • Give everything a good mix before eating to ensure the flavors are well distributed.
