Tortilla Cheeseburger Pockets

These Tortilla Cheeseburger Pockets are everything you love about a classic cheeseburger, wrapped up in a crispy, golden tortilla. Filled with seasoned beef and melty cheese, they’re easy to make, fun to eat, and perfect for busy weeknights, kids’ lunches, or casual entertaining. Serve them with ketchup or burger sauce for the ultimate handheld comfort food.

Ingredients
  

For the Tortilla Cheeseburger Pockets

  • 1 lb ground beef
  • 1 white onion diced
  • 2 garlic cloves minced
  • 1-2 tsp Worcestershire sauce
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • 3 large flour tortillas cut in half
  • 8 oz cheddar cheese shredded
  • Sesame seeds optional, for topping

For the Sauce

  • 1/4 cup mayonnaise
  • 1 tbsp ketchup
  • 1/2 tbsp yellow mustard
  • 1/2 tbsp sweet pickle relish
  • 1/2 tsp white vinegar
  • 1/2 tsp sugar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions
 

  • Heat a pan over medium-high heat. Add diced onion and cook for 4-6 minutes until translucent. Add garlic and cook for 30 seconds until fragrant.
  • Add ground beef and cook, breaking it up, until browned and cooked through. Drain excess grease if needed.
  • Stir in Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Cook for 2–3 minutes, until the beef is glossy and slightly saucy. Remove from heat.
  • Preheat oven to 350°F. Lightly oil an 8' round baking dish.
  • If tortillas feel stiff, lightly dip them in water to soften. Be sure to remove excess water to avoid them getting soggy then cut each tortilla in half.
  • Spoon beef mixture into the center of each tortilla half and top with shredded cheese. Fold into triangles, pressing gently to seal.
  • Arrange pockets in the baking dish so that the pointed side of the triangle is facing the middle of the dish. All 6 pockets should fit in a complete circle.
  • Bake at 350°F for 15 minutes, then raise the temperature to 400°F and bake for another 5-10 minutes until deeply golden and crisp.
  • While the pockets are baking combine mayonnaise, ketchup, mustard, sweet pickle relish, vinegar, sugar, onion powder, garlic powder, paprika, salt, and pepper in a small mixing bowl. Stir well to combine and set aside until ready to use.
  • Once the pockets are out of the oven, let cool slightly then serve with the dipping sauce on the side.
