Banh Mi Smash Tacos

Banh Mi Smash Tacos

Course: Lunch, Dinner

Ingredients:

For the Pork:

  • 1 pound ground pork

  • 2 cloves garlic, minced

  • 2 tablespoons fish sauce

  • 1 tablespoon soy sauce

  • 1 tablespoon brown sugar

  • 1/4 teaspoon black pepper

For the Pickled Vegetables:

  • 1 cup julienned carrots

  • 1 cup julienned daikon radish

  • 1/2 cup rice vinegar

  • 1/4 cup water

  • 2 tablespoons sugar

  • 1/2 teaspoon salt

For the Tacos:

  • 8 small corn or flour tortillas

  • 1/2 cup fresh cilantro leaves

  • 1/2 cup fresh mint leaves

  • 1/2 cup fresh basil leaves

  • Sriracha or hot sauce, for drizzling (optional)

Instructions:

  1. In a bowl, combine the julienned carrots and daikon radish.

  2. In a separate bowl, whisk together the rice vinegar, water, sugar, and salt until the sugar and salt are dissolved.

  3. Pour the vinegar mixture over the vegetables and toss to coat. Let them sit for at least 30 minutes, tossing occasionally. You can make these pickled vegetables ahead of time and store them in the refrigerator.

  4. In a bowl, mix together the ground pork, minced garlic, fish sauce, soy sauce, brown sugar, and black pepper.

  5. Take a handful of the pork mixture and evenly spread it over the tortilla, ensuring it reaches the edges.

  6. Preheat a griddle or skillet to 350 degrees.

  7. Sear the tacos with the meat side down for 5 minutes. Flip them over and sear for an additional 5 minutes and remove from heat. Repeat this process for all the tacos.

  8. Top with the pickled vegetables, fresh cilantro, mint leaves, and basil leaves.

  9. If you like a little heat, drizzle some Sriracha or hot sauce over the top.

  10. Serve your Banh Mi Smash Tacos immediately and enjoy!
