Bite-Sized Mini Tomato Pies

Bite-Sized Mini Tomato Pies

Ingredients

  • 1 package Pillsbury Pie Crusts

  • 2 cups campari tomatoes, diced

  • 1/2 cup white onion, diced

  • 1/4 cup pimentos, diced

  • 2 cloves garlic, minced

  • 3 strips cooked bacon, chopped into small pieces

  • 1/2 cup mayonnaise

  • 1 teaspoon fresh basil, plus more for garnishing

  • 1/2 cup cheddar cheese, plus more for topping

  • 1/2 cup shredded Mozzarella cheese

  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.

  2. In a large mixing bowl, combine tomatoes, onion, pimentos, garlic, bacon, mayonnaise, cheddar cheese, mozzarella cheese, fresh basil, salt, and pepper and mix until well combined.

  3. On a clean work surface, roll out your pie crust. Using a round object like a cup, cut a circle in your dough that’s slightly larger than the size of each individual muffin inserts.

  4. Place the cut dough into each muffin insert and lightly pierce the dough with a fork on the bottom.

  5. Drain any excess liquid from your tomato pie mixture then fill each pie crust cup with the mixture, distributing it evenly.

  6. Sprinkle each mini tomato pie with shredded cheddar cheese for a delectable cheesy topping.

  7. Bake the mini tomato pies in the preheated oven for about 15-18 minutes, or until the crust turns golden brown and the cheese is melted and bubbly.

  8. Remove the mini tomato pies from the oven and let them cool for a few minutes. Garnish with fresh basil leaves for a touch of freshness and added visual appeal.

  9. Serve these bite-sized delights warm or at room temperature, allowing your guests to savor the burst of juicy tomato goodness and the delicate, buttery crust with every bite.
