Cotija Roasted Brussels Sprouts

Ingredients:
1 pound (450g) Brussels sprouts, trimmed and halved
2 tablespoons olive oil
1/2 cup Sierra® Brand Ground Cotija Cheese from V&V Supremo®, plus extra for garnish
2 cloves garlic, minced
Salt and black pepper to taste
Instructions:
Preheat your oven to 425°F (220°C).
Toss the trimmed and halved Brussels sprouts with olive oil, garlic, Sierra® Brand Ground Cotija Cheese from V&V Supremo®, salt, and black pepper in a large bowl.
Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes or until they are tender and crispy, stirring halfway through for even cooking. They should be lightly browned and have crispy edges.
Once the Brussels sprouts are done roasting, transfer them to a serving platter.
Sprinkle additional Cotija cheese over the crispy Brussels sprouts.
